What a wonderful day! Even though Nicholas didn’t understand anything that was going on, he made the rest of us very happy by pulling at some wrapping paper. I can see how the face of Christmas has changed for us for the next few years – it’s going to be much more about Nicholas than us for the next 15 or so years. Although, I expect that my wonderful husband and Mum will continue to make sure I have a few minutes all my own, to celebrate my birthday. For those who don’t know, Nicholas was given a Christmas name, to recognize my birthday.
We were spoiled with oodles of wonderful gifts and lots of goodies to nibble on (at the rate I’m going, they’ll be gone by New Year’s Eve). Patrick and Mum both made my favourite Christmas treat – we call them Rainbow Rolls:
- 2 1/2 cup mini marshmallows
- 1/2 cup diced cherries
- 4 squares semi-sweet chocolate
- 1 tsp butter
- 1 egg
- 1 cup icing sugar
- short coconut
- Melt chocolate. Remove from heat and beat in butter, egg, and sugar. Add marshmallows and cherries. Divide into three. Sprinkle coconut on waxed paper, roll each part into a log, wrap in wax paper and freeze. Note: let the mixture cool a little before rolling it, so the coconut stays on the outside.
